Vinification can only preserve the aromas that grapes
built up during the ripening season. Thus, gentle processing and
great care in the cellar are a real concern to us. We aim to secure
a deep fruitiness typical of the respective variety and a very clear
structure in our white wines by applying pneumatic pressing, complete
clarification of the musts and cool fermentation. Aging in stainless
steel tanks will emphasize these characteristic features until bottling.

An ever increasing significance has gained the production
of high-quality reds. During the past decade, the red wine portion
has risen to more than 25%. Traditional fermentation on the skins
followed by malolactic fermentation provide powerful long-lived
wines with pleasant tannin structures. The best growths from great
vintages are kept in small new oak barrels to get complex, aromatic
wines with high aging potentials.
